A few times a year we put our collective heads (bitter heads this round) together and whipped up a WCIPA recipe that has a bit o’ lingering bitterness to satisfy the other bitter heads out there. In comparison to our Statement of Westy WCIPA, this collab is just a wee bit more bitter, and still quite dang approachable!
Built on a base of the aptly named IPA malt, with touches of dextrin and crystal wheat 3L, this malt backbone allows the hops to take front and center. MI Chinook, Simcoe, Crystal, and some super classic Cascade grace the kettle additions, as well as the whirlpool on the hot side of things. The duo of Simcoe and MI Chinook were dropped in cold side for a hefty dry hopping regimen. And our favored house ale yeast strain rounded it all out nicely.
Punchy and assertive, with big flavors and aromas abound. This one hits on multiple levels, y’all.
