We took our house lager, Schifdtbier, and did a riff on it to produce a zippy lil’ number that’s got a bit more going on aromatically. Enter, Gear Schifdt![br]
Built on a base of of 100 percent pilsner malt and hopped in the kettle with some classic Hallertau Mittelfruh. We decided to take some Chinook hops and add a smidge of a dry-hopping regimen to get some punchy fruit notes and some pine out of it to meld with the grassy notes from the aforementioned noble hops. The result is a unique aromatic experience as noble hops from across the sea aren’t typically paired up with American hop varietals very often. Our favored house lager strain capped it all off nicely.Zippy and zesty with a delicate, yet complex, nose on it… give it go, y’all!

You are wondering, did I read that right? A hazy rye IPA? Correct! Most rye-forward IPAs are presented in a fairly clear format. We wanted to try sometime a lil’ different and give y’all one in a haze-centric format. Heck, “rye” not?Built on a mixed base of choice 2-row and pilsner malts from our pals at Riverbend Malting in NC, with a decent smack of one of their unique, terroir-driven malted ryes to boot. Some classic Centennial hops grace a small kettle addition, as well as a gob of them in the whirlpool too. Altus, Nugget CGX, Centennial CGX, and the new lovely HRC-002 join forces for a killer dry-hop drop.[br] Expect bright citrus, stone fruit, pineapple, and a wisp of floral notes to pair up with nuanced earthy spiced tones. Smooth, but with an assertive bite on the back end, this IPA is one-of-a-kind imbiber and a dang fun one for the overall line up on tap.

Attune your palates to Warp Factor Damn Delicious and ride it into subspace. This coffee-laden oatmeal stout will have you buzzy both ways… focused and relaxed in kind! Named for an integral part of any warp core on a Federation Starship in Star Trek and its myriad of spin offs. (More nerd stuff? Always!) This will also be the first in a series of exploring the “intermix” of coffee and beer with our pal C.J. Porter Born, Owner/Founder/Roaster of Origin Coffee Co. in St. Paul, MN. Built of a base of Maris Otter, with a supporting cast consisting of choice crystal and roasted malts… and of course, a host of different kinds of oats. A sprinkle of Helios hops keep the malt in check from getting too cloying without contributing any flavor/aroma of its own. Our favored house ale yeast strain rounds everything out superbly. Last, and certainly not least, the star of the show in this dark liquid amalgam is the custom-roasted coffee made just for this beer. And here I’ll hand off the baton to let C.J. speak about the wonderful beans we incorporated into this tasty bevvy… “The coffee I selected for this particular beer was a 50/50 blend of a natural process Brazil and a washed Mexico. The Brazil comes from the state of Minas Gerais and has a great citrus backbone to it’s flavor profile. Blood orange, hazelnut and cocoa are among the most pronounced tasting notes in this cup. The Mexico comes from San Mateo Yoloxochitlan, an area in Oaxaca that I was fortunate enough to visit in 2019. This coffee, and all coffees from this region, will always have a special place in my heart. This coffee has notes of cocoa, caramel, citrus and toffee. I roasted these two coffees separately to dial in the roasts according to the desired flavor profiles, and then blended them together post roast. What we get from the two coffees together is a delicious flavor combination of chocolate, roasted nuts, orange and caramel. A perfect addition to this wonderful beer! Let’s Get To It! – Midwest IPA
We took inspiration from some of our favorite IPAs that are intrinsic to the Midwest proper and whipped up this homage to them in the tastiest dang way we could. As the name says, let’s get to it shall we? Built on a base of classic pale malt with touches of dextrin, Munich, white wheat, and a smidge of golden naked oats. We utilized some bold, new hop kids on the scene, Anchovy (just a silly name, no fishiness here) and Zumo for some kettle additions as well as in the whirlpool. Anchovy and Zumo are also used in a double dry hopping regimen, along with some Michigan Cascade. Our favored house ale strain rounds the whole package out. *chefs kiss* Expect multiple layers of all the damn citrus with back notes of raspberry and pine coupled up with a solid malt backbone that lends the lightest sweetness to the mix. As mentioned above, it’s a great nod and tip of the cap to Midwestern-based IPAs that surround us from our other stately neighbors. Come down and slay a pint and stay for more!

Friendly neighbors? Bitter rivals? Bloomington and Edina have been friendly (sometimes not?) competitors for decades. With that in mind, we got together with the crew at Wooden Hill in Edina MN, to create a bright and punchy Summer Wheat Ale.[br] Built on a mixed base of pilsner and Golden Promise with heaps and gobs of wheat for a soft, yet medium-full body. Nectaron hops lend a kiss of citrus and tropical tones to wax poetic about the short amount of sunny, hot days we've got here in the Twin Cities. Our favored house ale strain rounds it out nicely.[br] Drop by Wooden Hill to try their version as well and you decide which brewery tops the other! Cheers to rivals and "frenemies" alike!

Oooooeeeeee! It’s hot and sticky out there, y’all! We’ve got the perfect tart n’ tasty treat to help alleviate the heat. This newest fruited sour to our line up is thirst quenching in the extreme! Built on a mixed base of pilsner and white wheat malts, with a touch of malted oats for a body boost. Lotus hops add delicate balance while giving off a whiff of subtle citrus tones. Our favorite house sour yeast strain lends its puckering talents to the fold while also fermenting the beer to completion. And last, but certainly not least, the stars of the show are the gobs of mango and lemon as its namesake suggests. Punchy and zesty, with the mango taking a backseat to the more overt lemon notes… it’s a refreshingly sour libation for your palates!

Double the current, double the fun! We took our golden baby NE IPA and cranked it up a notch. Bigger mouthfeel, more hops, and a higher ABV… good things come to those to wait, that’s for sure. Built on a base of pilsner malt with gobs of both wheat and oats to bolster the body and add a smooth mouthfeel. A sprinkle of both spelt and dextrin help it all along as well. The duo of El Dorado and Idaho 7 grace the whirlpool, while the trio of El Dorado CGX, Idaho 7 CGX, and Vista were added in droves for a wallop of a dry hop addition. And last, but not least, our favored hazed out yeast strain rounds it all out to a wonderful finish. Bigger and bolder, yet still smooth… this bigger sibling to our flagship NE IPA makes itself known with aplomb. Don’t mind the smaller format pour size, trust me it's worth it.

Got another hop-laden gem for y’all to imbibe right here! Made in collaboration with local pro disc golfer Richie Ortiz, and named after a particular form of teeing-off for disc golfing, X-Step is lovely and approachable with a low ABV format that’s punched up to the max with cool kid hops. Built on a mixed base of pilsner and Golden Promise, with a decent wallop of wheat, gobs of oats, and a touch of dextrin. Cashmere and Citra Cryo grace the whirlpool, while the trio of Cashmere, Citra Cryo, and Nelson Sauvin meld themselves into a decent-sized dry-hop addition. Utilizing our favored house haze-positive aie strain for that quintessential look and feel that bolsters those damn fine hop aromatics/flavors. Expect waves of tropical fruits and citrus with an undercurrent of stone fruits to mingle nicely on the palate. This soft and pillowy pale ale goes well with a day of tossing disc at one of the myriad of courses around the metro. Cheers!

Skål for Sigmund Some of you beer aficionados may have heard of this crazy little thing called Kveik; a powerhouse farmhouse culture that shook the world of microbiology the hardest its been shooketh since Emil Christian Hansen isolated the first pure brewer’s yeast strain in the late 19th century. Never has a yeast left brewers so dumbfounded as one that ferments in less than three days, at temps up to 40 degrees hotter than average ale fermentations, and smells like…. Oranges? Who knew something like this was hiding in fjords of western Norway? Thanks to a man on a mission, the dedication of a few Farmhouse brewers keeping their tradition alive (and, of course, professional yeast labs), multiple strains of Kveik yeast are available to brewers around the world! The commercial Voss Kveik strain carried by most labs now came from a single home brewer’s dried out yeast culture stored in an old sour cream tub. Thanks to Sigmund Gjernes from Voss, Norway, we’re able to explore a whole new world of flavor, so raise a glass with us and say: Skål for Sigmund! No two farmhouse ales are exactly alike—especially when produced commercially—but we tried our best to brew up a semi-authentic version of his Norsk Vossaøl for you to enjoy from the comfort of our Minnesota taproom. This labor of love yields a deep, hazy orange brew giving off notes of juniper berries and orange marmalade with enough body to support the complex yeast profile that comes along with a 105 degree fermentation. Don’t be fooled by the ease at which she sips, though. A three hour boil made sure this baby came in at 8.9% ABV, which means it should be savored, not slammed.

So… this beer is a lil’ late to the party, so to speak. We know y’all probably expect a Hefeweizen at the beginning of Summer… but here we are at the eleventh hour anyway releasing ours while this damn heat keeps hanging around. Built on a mixed base of pilsner and white wheat with a touch malted oats. Loral hops provide delicate balance and toss off a smidge of citrus. A traditional Hefe yeast is the star of the show here… banana and clove blend together and make each other pop. Effervescent, fruity, crisp, and fairly dry… slay the heat with this ages old banger of an ale.

Do you remember when recess was your favorite subject in school? And on those days when your lunch was packed with a peanut butter, honey & banana sandwich, you were livin’ your best life!! Webster’s Dictionary tells us that recess is a suspension of business or work, often for rest or relaxation. It’s the period of time between working on a project when we can just chill. Built on a mixed base of pilsner & pale malts, with a touch of white wheat for a light & slightly nuanced backbone. Bravo hops provide delicate balance while a decent smack of clover honey lends a wisp of sweetness, as well as body. Lil' additions of PB gives off aroma/flavor of itself. Last, but certainly not least, we utilized a super neat yeast strain from our pals at @omegayeast that releases fruity esters of bananas without having to add any actual bananas... science is rad! Light to medium bodied, with mild bready notes, whiffs of peanut butter, & pleasant banana tones... take a breather, an intermission from your busy day to enjoy this blonde ale and reflect on some of the best days of your life.

It’s no secret that New England IPAs are the darling of the beer world at present. One might say they are the current obsession. With that in mind, we crafted a quintessential haze-craze IPA to imbibe. Built upon a base of Pilsner malt, backed up by hefty doses of white & torrified wheats & gobs of oats. Azacca & Idaho 7 work together to create flavors/aromas of punchy citrus, bright mango, & a hint of dank pine. An expressive London Ale yeast strain coupled with the aforementioned wheat & oats to create haze stability, softness, & very light sweetness.

As a tip of the hat & a big nod to traditional ales across the proverbial pond, we crafted up an English-Style Mild as our House Pub Ale! The malt bill is made up of 100 percent British malts. Maris Otter, Golden Naked Oats, Pale Chocolate, Crystal T-50, Dextrin, & Brown Malt meld together to offer up varied notes of toast, nuttiness, light toffee, Tootsie Rolls, & a wisp of roast. And while malt is undoubtedly the star of the show, a traditional English yeast strain adds slight notes of oaky wood & a bit o’ body too.

Simple ingredients yield simple pleasures. This lil’ crusher is our house lager. A base of Pilsner malt, coupled with German Diamant hops and a sprinkle of Apollo for balanced bitterness provide subtle nuances to this crispy beer. Slightly-sweet cracker maltiness merges with hints of bright citrus & floral notes. What’s in the name? Welp… its a totally made up spelling for a “shift beer”. Fun & cheeky? Yes. Crisp & refreshing? Also, yes!

This simple, straight-forward American Pale Ale straddles the line of two worlds… a nod to classic West Coast style pale ales with a tip of the hat to their softer, juicier cousins as well. Running parallel with one another they amalgamate into this low-ABV, full-flavored thirst quencher. A sturdy base of Pale malt, backed up by touches of Vienna & Dextrin provides a canvas to layer upon. Hallertau Blanc & Sultana hops provide notes of classic notes of citrus & pine, as well as assorted tropical fruits & light stone fruit. A neutral American ale yeast strain rounds it all out nicely.
