Burning at Both Ends – Munich Dunkel
We all toil hard now and again… well, too much actually in today’s day and age. This lil’ German dark lager is for all of us that have our collective noses to the grindstone and burn that proverbial candle at both ends more than we would like to admit.[br]
Built on a base of various Munich malts, with sprinkle of Caraaroma and a smidge of roasted malt for color accentuation. Hallertau Mittelfruh provides noble hop aroma, while a traditional German lager yeast ferments to a pleasant crispness and brilliant clarity after slumbering at lagering temps for many weeks.[br]
Low enough in ABV to have multiple pours and still feel on the up and up… grab, slay, repeat! And as with all lagers we make here, it’s a labor of love and an exercise in patience. Please enjoy with mirth and merriment!

Gear Schifdt – Lil Hoppy Lager
We took our house lager, Schifdtbier, and did a riff on it to produce a zippy lil’ number that’s got a bit more going on aromatically. Enter, Gear Schifdt![br]
Built on a base of of 100 percent pilsner malt and hopped in the kettle with some classic Hallertau Mittelfruh. We decided to take some Chinook hops and add a smidge of a dry-hopping regimen to get some punchy fruit notes and some pine out of it to meld with the grassy notes from the aforementioned noble hops. The result is a unique aromatic experience as noble hops from across the sea aren’t typically paired up with American hop varietals very often. Our favored house lager strain capped it all off nicely.Zippy and zesty with a delicate, yet complex, nose on it… give it go, y’all!

Let’s Get To It! – Midwest IPA
We took inspiration from some of our favorite IPAs that are intrinsic to the Midwest proper and whipped up this homage to them in the tastiest dang way we could. As the name says, let’s get to it shall we? Built on a base of classic pale malt with touches of dextrin, Munich, white wheat, and a smidge of golden naked oats. We utilized some bold, new hop kids on the scene, Anchovy (just a silly name, no fishiness here) and Zumo for some kettle additions as well as in the whirlpool. Anchovy and Zumo are also used in a double dry hopping regimen, along with some Michigan Cascade. Our favored house ale strain rounds the whole package out. *chefs kiss* Expect multiple layers of all the damn citrus with back notes of raspberry and pine coupled up with a solid malt backbone that lends the lightest sweetness to the mix. As mentioned above, it’s a great nod and tip of the cap to Midwestern-based IPAs that surround us from our other stately neighbors. Come down and slay a pint and stay for more!

Skål For Sigmund – Norsk Vossaøl
Skål for Sigmund Some of you beer aficionados may have heard of this crazy little thing called Kveik; a powerhouse farmhouse culture that shook the world of microbiology the hardest its been shooketh since Emil Christian Hansen isolated the first pure brewer’s yeast strain in the late 19th century. Never has a yeast left brewers so dumbfounded as one that ferments in less than three days, at temps up to 40 degrees hotter than average ale fermentations, and smells like…. Oranges? Who knew something like this was hiding in fjords of western Norway? Thanks to a man on a mission, the dedication of a few Farmhouse brewers keeping their tradition alive (and, of course, professional yeast labs), multiple strains of Kveik yeast are available to brewers around the world! The commercial Voss Kveik strain carried by most labs now came from a single home brewer’s dried out yeast culture stored in an old sour cream tub. Thanks to Sigmund Gjernes from Voss, Norway, we’re able to explore a whole new world of flavor, so raise a glass with us and say: Skål for Sigmund! No two farmhouse ales are exactly alike—especially when produced commercially—but we tried our best to brew up a semi-authentic version of his Norsk Vossaøl for you to enjoy from the comfort of our Minnesota taproom. This labor of love yields a deep, hazy orange brew giving off notes of juniper berries and orange marmalade with enough body to support the complex yeast profile that comes along with a 105 degree fermentation. Don’t be fooled by the ease at which she sips, though. A three hour boil made sure this baby came in at 8.9% ABV, which means it should be savored, not slammed.

Well, if this isn’t a timely addition to the line up… with all this late-March snowy (predictable) nonsense we got going on here in MN. That lovely lupulin doesn’t have to compete, or combat, with any esters that usually arise from standard ale yeasts.Built on a simple base of pilsner malt with a decent smack of rice (indicative of the “style”) and a lil’ bit of dextrin malt to create a very neutral malt backbone, with enough left behind for head retention, for hop expression to blast forth unhindered. Citra and Estate Grown Comet couple together for some classic late-kettle additions. Citra and Eureka were dropped into the whirlpool. Citra Cryo, Estate Grown Comet, and Eureka team up for a big (but not overwhelming) dry hop addition. A classic continental lager yeast was utilized for a low and slow cold fermentation and an extended slumber. Total time for grain-to-glass: 9 weeks.Expect aromatics/flavors reminiscent of dank pine, sweet citrus flesh, assorted stone fruit, and light floral notes. Barrel Aged Another Happy Landing – Imperial Brown Ale - Collaboration with J. Carver and Copperwing Distilleries
Holy moly, y'all… the time has come. We woke the beast from its long slumber and got it all ready to present to you in all its barrel-laden glory. We took a small portion of our 1st Anniversary beer, Another Happy Landing - an Imperial Brown Ale - and racked it into fresh local MN bourbon barrels from our friends at Copperwing Distillery and let it rest and ruminate for six months. We then racked it again into local MN fresh rye whiskey barrels from our pals at J. Carver Distillery for an additional six months to gather yet more depth of character. The result of this combined year-long aging has yielded one damn tasty gem. Smooth whiskey-soaked oaky vanilla notes pair in tandem with the base beer’s original tones of nutty, toffee-like malt sweetness to amalgamate into one cohesive libation. This beauty is big and bold, yet approachable despite its boozy nature, with a light warming note on the palate to finish. One could argue that the lack of roasted malt character in this beer lets the barrel characteristics express themselves more fully and with more nuance. But… we will let y’all decide that for yourselves.

Shardic Expression 2.0 – Imperial Maple Fudge Oatmeal Stout
It’s that time again, y’all. We dug our Imperial Oatmeal Stout recipe from last year out of the vault and changed up a few things to present it in a new, delicious way. Whereas last time there was coffee and vanilla imbued within the beer… this round has maple and fudge elements to the whole instead! Built on a hefty base of Maris Otter, with a whole slew of a supporting malt bill. Two types of oats, a deluge of crystal and roasted malts, and a touch of dextrin and other choice specialty malts round out the grist. A couple different dark sugars grace the whirlpool along with a deep dose of maple sugar as well. Lotus hops provide enough balance to keep the sweetness in check. Both liquid and nib versions of cacao were added to mid-fermentation & some more maple was added towards the tail end of fermentation. Our favored house ale strain chewed through this beast and rounded it out and wrapped it all together lovingly. Large and in charge… this deep, dark leviathan of an Imperial Stout is perfect for nightcaps and curling up with your favorite book, game, or show. Let it lull you into an easy, peaceful experience.

Saison de Rècolte – Harvest Saison - Collaboration with Bent Paddle Brewing Co.
Ooooooeeee… get ready, y’all. This one here is damn tasty. When you get together two brewers that adore saisons some magick happens. Made in collaboration with Bent Paddle Brewing, this saison incorporates some fun harvest ingredients to make it stand out, as well as add complexity and nuance to a beer style that nowadays has nearly no bounds. Built on a base of European-style pilsner with spelt, malted oats, and two kinds of rye, and a touch of acidulated to lend a malt backbone that is delicate yet medium-bodied with a wisp of earthy spice. Loral hops lend their ever-reliable floral, light citrus, and noble grassy tones. Two types of local MN honey from our pals at Bare Honey - Lavender Blossom and Buckwheat - were added at multiple steps during the brewday (mash, whirlpool, fermenter during knockout) to ribbon together a myriad of aromatics and light sweetness. A mega attenuative French-leaning saison yeast strain fermented it all bone dry while tossing off its own spicy phenols and smooth esters… with a nice edge of minerality to boot. Delicate yet bold… dry with a wisp sweetness… and packed with a swirl of aromatics/flavors that dance around on the palate from sip to finish. This refreshing and delectable ale is great for observing the harvest (however that may look to y’all individually) and imbibing in the company of friends and family. Bonus! For anyone heading to Autumn Brew Review this weekend… this beer will be pouring both at our booth as well as at over with the Bent Paddle crew and their set up! Cheers!

Are the heat and humidity finally subsiding? Does anyone know? We’ll see right? Either way ya slice it, the days are definitely getting cooler. This crispy, nuanced, and heckin’ tasty lager is our last nod to the golden days of Summer. Named after the scientific genus name covering the many species of sunflowers… My Darling, Helianthus will have you dreaming of the Sun’s warm embrace once again. Built on a mixed base of two different European-style pilsner malts, with a touch of wheat… and the star of the show, malted sunflower seeds. The seeds themselves lend a very light nutty complexity to the whole and melds well. Hallertau Blanc and Hallertau Mittelfruh hops toss off their lovely noble grassy and floral notes. ’Tis the season for fresh/wet/what-have-you IPAs! And we’ve got a dang tasty one for y’all! We tossed gobs and gobs of Citra three different ways into this hop-forward treat. Built on a base of local MN pilsner with slight touches of white wheat, malted oats, and dextrin. T-90 (standard) Citra hop pellets were dropped into the kettle for some classic additions. Handfuls of Citra Cryo were utilized for a big whirlpool addition. And the star of the show… Flash Frozen Fresh Citra Cryo pellets from our pals at Yakima Chief Hops out on the west coast were overnighted to us and used in a hefty dry-hopping regimen the very next day. The combination of all these Citra personalities meld together to present an extremely punchy and bright presentation of one the darlings of the hop realm. Our favorite house ale strain rounds everything out nicely and lets the hops take center stage. It’s packed full of flavor, but not overly sweet… its got body, but leans towards dry… and its slightly cloudy, but not full on hazed out. Built on a base of pilsner with a nice smack of Golden Promise from across the pond. Touches of the always stalwart dextrin and white wheat make an appearance, while a bit o’ flaked oats wrap it together. A lovely blend of El Dorado and Nectaron hops make up the kettle hopping and whirlpool additions. El Dorado CGX and Nectaron team up for dry-hopping. A super aromatic terpene in the form of Pineapple Express from our pals at AbstraxTech was also dropped in cold-side to add it’s own mark to the whole. And last, but not yeast, an awesome new yeast strain from our buds at Berkeley Yeast, called Sunburst Chico, gives off waves of pineapple tones. Dragon fruit powder was added to the whirlpool to garner wonderful color and give off whispers of light tropical fruit. Our house sour strain tosses off citrus-leaning tart notes and ferments the beer to a fairly-dry attenuation. Gobs of red prickly pear puree was added to late-fermentation to add further depth of color, as well as a sweet juiciness reminiscent of watermelon. Coming ‘atcha from all angles, this beast of a hop-forward bruiser has got it going on in spades with an exciting new experimental hop to boot… Built on a mixed base of Pilsner and Golden Promise, with touches of White Wheat, and a dollop of Malted Oats. Bravo comes in early with a first wort kettle addition. This is followed by multiple, classic mid-to-later kettle additions of the aforementioned USDA “elite line” experimental hop dubbed simply as “333” from our pals at Hollingbery & Son Hops. Bravo and Vista come in clutch as backup support. A large charge of 333 was also utilized as a dip hop addition to coax out differing notes at sub-boiling temps. Last, but certainly not least, a huge drop of 333, and a decent smack of Vista, were added for dry-hopping additions. In short, we wanted to add 333 in multiple stages to unlock many facets of what it has to offer. We get waves of white peach, assorted red fruits, and sweet floral notes from 333, backed up by other assorted stone fruit & light melon from Vista, and slight orange-laden citrus from the Bravo. A highly-attenuative, clean house ale strain chews through it all and lends a light dryness while retaining a moderately-full body. It’s no secret that the craft beer industry falls a little flat when it comes to diversity—whether that be gender, race, sexual orientation, or a myriad of other identities. It was in response to this hole in our industry that the folks over at the Beer Dabbler founded the Pride in Brewing Scholarship in 2018 to award members of the LGBTQIA+ community with a full scholarship to pursue a formal brewing education and add a little more color to the craft beer world. This year, three past recipients of the Pride in Brewing Scholarship have joined forces with each other to present the first ever Pride in Brewing collaboration beer! And thanks to the generous donations from the Brewers Supply Group of all raw materials required to brew it, we’re able to donate a portion of each pour and crowler back to the scholarship for future applicants to further their brewing knowledge. A bready pilsner base with honey malted-oats and barley accentuated by multiple Amira and Comet hop additions in the kettle and cold-side yield a subtle nose of citrus and spice upon first sip, followed by a crisp, subtly sweet ale with undertones of honey and fruit that’s still dry enough to be refreshing on these hot summer days. Enter Khaos Grenade! Is it a sour? Is it an IPA? Fruit yet too? Yes to all, my friends. Built upon a base of pilsner, with a decent smack of white wheat, a smidge of dextrin, & a lil bit o’ maltodextrin for a lightly creamy mouthfeel. Lotus & Bravo hops were dropped into the kettle for varying degrees of orange-y aromas/flavors. Lotus Salvo was added to the whirlpool to push it even harder. A sprinkle of Himalayan sea salt was used to make everything pop and to add another very subtle layer on the back end. To top off the overt citrus notes, a decent amount… but not a ton… of blood orange puree was utilized in both the fermenter & brite tank. The aforementioned Lotus & Bravo made excellent dry-hopping partners to make sure the blood oranges didn’t have all the fun on the cold side. Voss Kveik, known for its orange-leaning esters, was pitched to round everything out nicely. Orange on orange on orange in layers… but still with a lil’ firm bite for IPA level presentation is the name of the game here, y’all. Tart, heavy citrus in droves, crisp, & a lil’ creamy to boot. Holy moly, y’all… we really went full send on the thiols with this one here. This pale ale will have you daydreaming of being on some boujee yacht sippin’ these suds with abandon. If we keep churning out tropical-toward beers do you think warmer weather will finally show up here in MN? We are definitely trying to manifest & conjure that into existence. Soon… so dang soon. Built on a base of some new super cool (and loaded with thiol-potential) undermodified Pilsner malt from our pals over at @maltwerks , along with a smidge of Munich for color, body, & nuance. We made it rain Calypso hops in the mash to unleash more of those thiols. We also utilized a different & new thiol-precursor product in the whirlpool to unfurl even more… you guessed it… thiols. Wrapping all this tropical madness together, as well as being the literal key to unlocking it, we snagged & pitched the veritable Star Party yeast strain from @omegayeast to coalesce everything cohesively into this gem of a beer. A sprinkle of dry-hopping with the aforementioned Calypso is just enough to put this into consideration as being a pale ale. Buuuuut… as we hammered it home enough already, we wanted this tasty ale’s flavors & aromas to be mostly driven by thiols. Trust me… it certainly is, my friends. Expect big notes of guava nectar, followed closely behind by passionfruit & citrus zest. A decent whiff of danky greens also presents itself on the nose too. Either way ya slice it… it’s refreshing, spritzy, & dry while maintaining a nice, round, & lightly hazy body. Come down and getcha some!

A neutral crusher of a Chico yeast lets the hops shine through brightly. Slightly sweet, yet finishes a bit dry. The aforementioned hopping schedule gives off notes of assorted citrus, ripe melon, guava, & a smidge of herbal pine. Both sides of the fence of the eternal "which style of IPA is better" debate should find at least a bit of common ground with this tasty gem. A dollar from every pour sold of this IPA will be donated to TC Habitat as well! C'mon down to the taproom and snag ya'self some of this beer!

Eugene’s Pre Prohibition Lager - Collaboration with Eugene the Brewery Pup
Let’s be honest, the light lager has had a chokehold on the American beer industry for as long as many of us can remember. But those refreshing little crushers weren’t always what we know and love today. Before being outlawed in those dark years of Prohibition, American Lagers were bigger, bolder, and, dare I say, hoppier. A true case of immigrant ingenuity, brewers were faced with the challenge of brewing those styles they loved from across the pond using ingredients that were new and indigenous to their new homes, and they did it well. Thus, we present Eugene’s Pre-Prohibition Lager! American 6-row barley and malted corn make up most of the malt bill, helped along with some 2-row Czech style pils and Great Chit malt for added body to stand up to a formidable hop presence that you don’t see in today’s light lagers. A pint of Eugene’s Pre-Prohibition Lager harkens back to the early days of American craft beer, so settle in, take a sip, and let history repeat itself. And pet your dog while you do it 😉

Another Happy Landing – Imperial Brown Ale with Toasted Coconut and Almonds
Hot diggity dang, y'all! Nine Mile is One Year Old today! As part of the celebration we made a doozy of a boozy ale for your eager palates... an Imperial Brown Ale w/ Toasted Coconut & Toasted Almonds. Think of an Almond Joy bar in liquid form... its full-flavored, with lovely layers! Built upon a mixed base of Maris Otter from across the pond, as well as local MN Pilsner malt from our pals over at Maltwerks, with a veritable host of specialty grains to lend layer to this robust malt backbone. Varied crystal malts interplay with some pale chocolate, brown malt, dextrin, golden naked oats, a smidge of Munich, and a bit o' of white wheat. Buckwheat honey from our buds at Bare Honey provides a boost of body & booze and gives off a wisp of earthy nuttiness . Lotus hops provide enough balance to counter the mild-to-moderate sweetness. And a beast of an English Ale yeast strain rounds everything out superbly. We also conditioned this big, bold ale on heaps of toasted coconut & a grip of toasted almonds. They each toss off loads of aromatics & flavor without being overpowering and obscuring the malt-forward presence of the whole. Large & in charge. Beguiling & sneakily smooth. Malty, toasty, nutty... bits o' baker's chocolate & light notes of toffee... and dessert-leaning tones ribboning throughout... this is a sipper worthy of a birthday party!! Come on down, imbibe some of this gem, & party with us today! Cheers & thank you all endlessly for the continued support! We've had a wonderful year & we will keep making the best beer we can for y'all to enjoy!

Phil – Pre Prohibition Porter
We dug back into a bit of the past for this one, y'all. Also known as a "Pennsylvania Porter", "Philadelphia Porter", & "East Coast Porter" this historical style has got a lil' bit of roast, a bit of toast, a smidge of sweetness, yet finishes fairly dry. Built on a mixed base of 2-row pale & 6-row malts with a varied supporting cast including: flaked corn, rye, red rye crystal, pale chocolate, & a touch of double roasted crystal. Lotus hops provide enough balance to cut through the subtle sweetness. Speaking of... we added a decent drop of molasses to augment the body, lightly boost the ABV, & have it give off wisps of depth. A nicely attenuative English Ale strain rounds it all out nicely. These Pre-Prohibition styles in general utilized whatever grains they had on hand from their own farms, of those of the surrounding area. Molasses was also a common adjunct to add as well. These particular porters were popularly brewed & consumed during Colonial America & around the Revolutionary War... hence their nicknames/monikers. Come on down and getcha some of this not very often brewed style of dark ale! Cheers!

Lithy – Lithuanian Farmhouse Ale
We're taking y'all back across the pond again to Eastern Europe nodding to centuries of tradition with our take on this varied continental style... Bulit on a mixed base of floor-malted Bohemian pilsner & white wheat with a supporting cast of golden naked oats, Munich, spelt, & acidulated malts. The trio of Lotus, Loral, & Bravo hops provide crisp balance and give off light tones of bright citrus & noble grassiness. Gobs of linden blossom honey from our pals over at Bare Honey (added to the mash, boil, & whirlpool) contributes added body, very slight nuance, & enzymes for the yeasties to do their excellent work. Speaking of... an assertive Lithuanian Farmhouse yeast strain from The Yeast Bay bestows most of the complex citrusy & earthy aromatic/flavor notes & makes it near bone-dry. Expressive, complex, super dry & still fairly full-bodied... this slapper of an ale gives off Spring-like vibes while we are yet in the clutches of cold. Come getcha some!

This newest Westy IPA making its way into our line up hits all notes y'all love & enjoy about the vaunted, hop-forward style... but with a couple added punches... Built upon a mixed base of Golden Promise & pilsner with touches of dextrin, white wheat, and acidulated malts making up the grist. The trio of Lotus, Amarillo, & Eureka hops were dropped in the kettle and varying points to utilize their excellent properties. Amarillo & Eureka also made up the substantial, yet restrained, dry-hopping additions. Now for the really neat parts... We utilized a super cool yeast strain from our pals at Berkeley Yeast that gives off terpenes (potent aroma/flavor compounds) that mimic freshie-fresh Cascade hops without using said hops at all. To back that up, we added some MOAR terps from our buds at AbstraxTech that mimic Chinook hops... also without adding (you guessed it) any of those said hops either. The aromatic/flavor contributions from the combination of the separate terpene sources, plus the dry-hop additions, make for a damn fine experience for your palates! Winter is most definitely upon us… WEATHER we like it or not. See what I did there? Yup, lame dad joke, correct. In the spirit of collaboration & cool beer ideas... coupled with this seemingly-forever-lasting-season up yonder here in MN… we, & our pals at Falling Knife Brewing in NE MPLS, present to y’all Frigid Digits Cold IPA! Aren’t all IPAs “cold” though? Yes… buuuuuut this moniker designates the method in which the beer itself was made. Cold IPAs are fermented with a lager yeast at the higher end of that particular strain’s temperature range & are also dry-hopped moderately, not super aggressively. (I mean, you can I suppose… you do you) They are also completely lagered out, like a pilsner, helles, etc. Cold IPAs are crisp, clean, dry, & a great canvas for hops to shine. This new-ish style is similar to an IPL (India Pale Lager) but slightly different. Look ‘em both up to compare if you want to get really nerdy about it. Built upon a super simple grist of pilsner malt, flaked rice, & a sprinkle of acidulated malt to get it all nice & crispy for y’all. Calypso & Cascade hops were tossed into the mash because yes, you guessed it… we thiolized this beer as well. Why not? Chinook Salvo got dropped in the whirlpool for some classic westy vibes. Small smacks of both Idaho 7 & MI Mackinac hops were used for dry-hopping to piggy back off of & accentuate the tropical thiol notes. Last, but certainly not least, a thiolized lager strain from our buds at Berkeley Yeast performed its double duty & steals the show for sure. Grain-to-glass timeframe: 8 weeks. Bright, crisp, & refreshing… with tropical tones that don’t drown everything out… this banger of a beer is an aromatic adventure. This newest addition to our line-up is a nod to Trappist brewing traditions that are marked by diligence & exacting details. Our take on this globally-lauded style gets pretty dang close, short of being in Belgium ourselves. Built on a large, sturdy, yet delicate base of Pilsner malt…. with bits of Munich, White Wheat, & Acidulated to round out the body & add nuance. Belgian Candi Sugar was also added to boost the ABV & help dry out the back end. Loral hops provide a firm, yet approachable bitterness, as well as slight notes of noble grassiness & candied lemon. A traditional Trappist ale yeast was utilized to drive forward esters of pear, apple & mixed citrus… with super light peppery phenols present throughout. Big & bold with a fuller body… yet smooth, with a wisp of sweetness & a crisp bone dry finish. Be careful… this one will sneak up on you quickly! (Did anyone catch the math reference in the name…?)

Smileized – Thiolized NEIPA (Collaboration with A-Side Public House) - Collaboration with A-Side Public House
Smile, y'all! Your day is about to get a whole lot better with a pint of this beauty in your hands! This new NEIPA to our line up is bursting at the seams with overt tropical notes of all contexts. What is "thiolized" you may ask? Thiols are richly dense flavor/aroma compounds that give off grips of tropical fruit notes... particularly passionfruit & danky guava, in this case. They can be found in both hops & certain types of malted grains as well. Some thiols are "unbound" and give off their notes naturally... some are "bound" and need some help releasing their goods. That's where a "thiolized" yeast strain comes into play. These strains release bound thiols in abundance. The end result is massive waves of the aforementioned tropical fruits. They play very well in IPAs of all sorts. We decided for our first foray into these new, killer strains to go the hazy route... Bulit on a base of local MN pilsner & white wheat... with a supporting cast of characters, including: torrified wheat, flaked wheat, dextrin, & flaked oats. Loads of Calypso hops went into the mash to bring out their thiol potential. A bunch of Lotus Salvo from our pals at Hopsteiner both went into the whirlpool. Big smacks of Citra, Vista, & Nelson Sauvin CGX from our buds at Crosby Hops fulfilled their dry hopping potential to the max. Last but certainly not least, London Tropics yeast from our friends at Berkeley Yeast tossed off those wonderful thiols to augment the hops. Everything plays off each other wonderfully!

Built on our usual fruited sour base of 2-row & torrified wheat. Small hits of malted oats, flaked wheat, & a sprinkle of acidulated malt makes up the rest of the grist. Sabro hops lend crisp balance & a wisp of assorted tropical aroma. Orange & Mango swirl around each other for a nice synergy of citrus & tropical notes.... however, the punchy orange does take a slight edge ahead of the competition. Bright, tart, refreshing, very fruit-forward, and gently dry. Slay a few of these in the hot sun on the weekends for sure!

Grizz N Glamour: A Grissette-Style Ale - Collaboration with Nouvelle Brewing
We’ve got a banger of a lil’ table beer for y’all! The crew from Nouvelle Brewing in Robbinsdale, MN dropped by to collaborate on this spritzy low-ABV ale. Grisettes are light on alcohol, highly-carbonated, easy to drink, & refreshing as all heck. Think of it as a “Saison Lite”, if you will. Our take on this style has notes of: cantaloupe, honeydew, stone fruit, & assorted citrus. Everything is in delicate balance & nothing lingers. It hits quick & dries out even quicker. Built on a mixed base of pilsner & white wheat malts. A decent hit of spelt, & touches of both flaked oats & wheat make it the rest of the grist. Loral hops provide a whisper of bitterness & and a smidge of noble grassiness. An expressive Kveik yeast strain - this one in particular perfect for farmhouse-leaning beers - from our pals at The Yeast Bay makes up a majority of the aforementioned flavor/aroma notes.

Our latest addition to the line up here is a double nod to both the beloved Caramel DeLite cookie & the dearly departed Betty White. Let’s just say there some big fans of both Golden Girls & damn good cookies here on staff at the brewery. Honor both simultaneously with a dark, delectable ale! Built on a base of local MN Pale malt, with a supporting cast of characters including: malted oats, dextrin, multiple caramel malts, & a couple different chocolate malts. A decent drop of cacao nibs & a smack of toasted coconut add depth & complexity. A neutral ale strain rounds everything out nicely. Note: this beer doesn’t get into pastry beer territory at all… the notes here are nicely nuanced and it finishes ever-so-slightly sweet. Baker’s chocolate, toasted coconut, malt chewiness… it’s tasty, my friends.

Ordrozenie: Polish Grodziskie
A Grod…. What? This newest addition to our line up is a crushable lil’ banger of a beer. Steeped in tradition & hyper-locality (in this case Poland), this smoked wheat beer hits a bunch of notes simultaneously. We decided to name it Ordrozenie - loosely translated to “revival” in Polish - as this ancient style of beer is slowly making a comeback… even here stateside in the US. These beers originally hail from the town of Grodzisk, Poland. A Grodziskie (pronounced: grow-GEE-skee-ya) traditionally is made with 100 percent oak-smoked wheat & noble European hops. It’s highly carbonated, dry, refreshing, & has a slight minerality to the finish. Keeping with tradition, we also used only oak-smoked wheat for our malt bill. Saphir hops provide an assertive, crisp balance with a nearly imperceptible grassy, herbal note. A lovely Kolsch yeast strain from our pals at The Yeast Bay rounded it off and dried it out nicely. We cold-conditioned this for a couple weeks (a “mini-lager phase”, if you will) to get it even crispier for everyone to imbibe this beer in heaps. Enjoy this unique & damn delicious ale outside with family & friends over a feast with your favorite smoked foods… or kicked back in a lawn chair doing absolutely nothing. Whatever it may be, relax & chill y’all! Na Zdrowie!

This newest sour to our line up its sure to quench & slay your thirst to the utmost. We started off with a super simple & clean grist of Bohemian Pilsner, White Wheat, & Acidulated malts. Apollo hops provide delicate balance while also contributing a lil’ citrus of its own. Sea salt & coriander were added to the boil for that classic Gose drip. A double drop of local MN clover honey from our pals at Bare Honey (whirlpool & fermenter additions) add bright & very light sweet notes, as well as a bit o’ body. Lastly, a decent smack of Key Lime puree layers into the whole, but does not overpower everything. Light, refreshing, tart, & dry… get your mitts on this lil’ crusher for sure!

Vista Obsession – Dip-Hopped NEIPA - Collaboration with Vista Hops
Ok y’all… we’ve got a doozy of a New England IPA right here. We utilized a unique method, in addition to dry-hopping, to showcase a new, sexy hop varietal named Vista. Referred to as “dip-hopping”, the aforementioned method takes hops and puts them directly into the fermenter after its cleaned & purged out. A portion of slightly cooled-down wort is moved into the fermenter mid-boil. Said hops steep in the fermenter while the rest of the boil continues on as normal. At the end of the brew day the rest of the wort is moved into the fermenter on amongst the steeped “dip” hops. This method takes advantage of multiple temp ranges & changes to get super robust flavors/aromas to leap forth. Built on a soft base of Pilsner, with hefty doses of both white & flaked wheat to add body. Sprinkles of dextrin malt & flaked oats add silkiness and boosted head retention. The above mentioned Vista hop takes center stage, with smaller additions of Lotus & El Dorado making up the remainder of the lovely lupulin in the beer. Our workhorse expressive house London Ale strain rounds it out nicely. Bright candied lemon meshes with peach, pineapple, and sweet orange notes with a hint of papaya.
